Peanut Butter Protein Squares
If you know me, you know nourishing others and myself is one of my favorite ways to show and feel love. There’s something special about getting creative in the kitchen and making food that nourishes the body and soul.
These bars have quickly become a staple in our house. Chocolatey and peanut buttery, packed with protein and healthy fats, they taste like dessert but actually fuel you. They’re perfect for a quick snack or post-workout bite.
INGREDIENTS:
¾ cup natural creamy peanut butter (just peanuts + sea salt)
¼ cup honey or maple syrup (I’ve tried both ways and both work. But I prefer honey)
1 tablespoon melted coconut oil
1 teaspoon vanilla extract
¼ cup ground flaxseed
¼ cup collagen powder
⅓ cup of your favorite plain or vanilla protein powder (I usually use Truvani)
2-3 oz of your favorite chocolate (I use Hu dark chocolate)
Flaky sea salt, for topping
INstructions:
In a medium bowl, stir together the peanut butter, honey (or maple syrup), coconut oil, and vanilla until smooth and creamy.
Add in the flaxseed, collagen powder, and protein powder, mixing until it starts to get thick. When it’s too tough to stir, use your hands to work it into a dough. It should feel a lot like cookie dough.
Press the dough evenly into a parchment-lined 8x4 loaf pan.
Melt the dark chocolate, then pour it over the peanut butter base. Tilt the pan so the chocolate spreads out evenly.
Sprinkle a pinch of flaky sea salt on top (don’t skip this, it’s the best part).
Chill in the fridge for about 30 minutes to an hour, then slice into 10 squares or bars.
Store them in the fridge! They’ll keep well for up to two weeks.
