my go-to Granola Bars

My favorite homemade granola bars! These are a wholesome, nourishing bar that’s perfect for busy days, pre-workout, or a sweet snack. Feel free to play with the add-ins! 

Ingredients:
āœ” 2 cups sprouted rolled oats (or regular rolled oats if you don’t have sprouted—sprouted just gives an extra nutrient boost!)
āœ” 1 cup crispy rice cereal
āœ” ¼ cup pure maple syrup
āœ” ¼ cup honey
āœ” ¼ cup chia seeds
āœ” ¼ cup milled flax seeds
āœ” 1 tsp cinnamon
āœ” ā…“ cup creamy, unsweetened peanut butter (or nut butter of choice)
āœ” Nuts & seeds of choice — measure with your heart (I used raw pumpkin seeds, sliced almonds, and raw sunflower seeds)
āœ” 3 tbsp coconut oil
āœ” 1 tsp vanilla extract
āœ” ¼ tsp salt
āœ” ½ cup dark chocolate chips (or your favorite kind)

Instructions:

  1. In a large bowl, combine oats, crispy rice cereal, chia seeds, flax seeds, cinnamon, and salt. Stir in your nuts and seeds.

  2. In a small saucepan over low heat, melt coconut oil, peanut butter, honey, and maple syrup. Stir until smooth. Remove from heat and stir in vanilla.

  3. Pour the wet mixture over the dry ingredients. Mix well to coat everything evenly.

  4. Let cool slightly, then fold in chocolate chips (this keeps them from melting too much).

  5. Press mixture firmly into a parchment-lined 8x8 or 9x9 pan. Tip: Use the back of a spoon or damp hands to really pack it down.

  6. Chill in the fridge for 1–2 hours, then slice into bars.

Storage: Keep in the fridge for up to a week, or freeze for longer shelf life.
